Healthy Ice Cream Made Simple

Today I tried’s ice cream idea – to use coconut milk and bananas as the base and sweetener.  It turned out great!  I especially love this for several reasons.  1.  I bought the ice cream maker attachment for my Kitchen Aid stand mixer several years ago for about $100, tried it once or twice, and then forgot about it (except for the guilt I feel when I run into it in the basement.)  2.  This recipe is so simple, it makes it a breeze to whip up inexpensive, healthy (read:  no chemical additives) and delicious home made ice cream.  That attachment is going to pay for itself now because I was paying $5 for a pint of the good stuff in the store.   With each batch of this I will recoup $8 because a batch makes 2 pints and it costs me about $2.  I’m liking this math!

  • 1 can of full fat coconut milk (13.5 ounces)
  • 1 T arrowroot powder (optional)
  • 3 frozen bananas (peeled and sliced small before freezing in a bag)
  • big pinch of sea salt
  • 2 t vanilla extract

Blend all of the ingredients in a blender until smooth.  Pour into an ice cream maker and process for 10-20 minutes until ice cream forms.  Put into airtight container for storage in the freezer.  Other options include adding flavorings like cocoa, cacao, acai/goji/lucuma/maca powders, other fruits, nuts, etc.  Anything solid like nuts should be added at the very end after ice cream has formed so as not to interfere with the freezing process.
