Chablis is noted for its crisp, clean style, and that’s why it’s perfect for this time of year. Winter has finally loosened its ironfisted grip on the northeast and the rest of the country, and finally, just finally, we are starting to see warmer spring weather and sunny days.
As is customary in all of France, Chablis wines can only come from the Chablis region in northern Burgundy, and they are always made with 100 percent Chardonnay, the only grape allowed in the appellation. The soils in this region run along the Serein River, a tributary of the Yonne, and are comprised of clay, limestone, and fossilized oyster shells, which we mention for two reasons. The first is to remind you that oysters and Chablis are a marriage made in heaven, and the second is to briefly discuss the idea of minerality in wine. The fossilized oyster shells are a source of calcium in the vineyards; that and limestone add to the wines’ mineral component, providing qualities described as river rock, flint, and slate alongside green apple and citrus flavors. These 150-million-year-old soils were once at the bottom of a vast ocean. Chablis is a cold-weather wine region, and the oyster shells serve a distinct purpose; during the day, they absorb heat that at night is reflected up at the vines, helping to keep the grapes at temperatures suitable to promote ripening.
There are four different bottlings in the Chablis region, including Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Bottles labeled Petit Chablis will almost always have been made in 100 percent stainless steel, while Chablis, Chablis Premier Cru, and Chablis Grand Cru may likely only see previously used and lightly toasted barrels. These impart softer flavors and characteristics to the finished wines. Chablis wines may simply be labeled Chablis or Chablis Villages and can also include one of 20 village appellations. There are 40 premier cru climats or named vineyard plots; a label may simply read Chablis Premier Cru or may have the name of the climat after the words Premier Cru. At the apex of the Chablis pyramid sits Chablis Grand Cru, the finest expression of Chardonnay from the region’s best sites. The seven Chablis Grand Cru climats are Grenouilles, Preuses, Blanchot, Bougrot, Les Clos, Valmur, and Vaudésir.
Premier Cru and Grand Cru Chablis wines will age gracefully for 10 years and well beyond, and even village-level Chablis will continue to evolve in the bottle for three to five years. Here are seven we have chosen for this week:

J. Moreau & Fils 2023 Chablis Fourchaume Premier Cru

It all started when Jean-Joseph Moreau, a barrel maker, married a winemaker’s daughter and subsequently inherited one of the oldest Chablis houses in the region. It is currently owned by the Boisset family, and their Fourchaume 2023 Premier Cru has ethereal notes of toasted almond, caramelized pineapple, and white citrus blossom in the complex bouquet. Bracing but balanced acidity and structured minerality support flavors of lemon curd, grapefruit pith, and freshly sliced pear.

After 10 years of family internship, he decided to establish his own domain in 1987. Laurent and Marie-Clotilde’s daughter, Solange, has recently joined the family business as a winemaker. Their 2022 Chablis has enticing aromas of flan, vanilla, and lemon curd. Bracing minerality is intertwined with flavors of mandarin orange, lemon zest, and Anjou pear.

Louis Jadot 2021 Chablis Fourchaume Premier Cru


Image Credit: Louis Jadot Louis Henry Denis Jadot founded what would eventually become Louis Jadot in 1859, and today it is one of the largest producers in Burgundy with 140 acres of vineyards in some of the best appellations. The maison’s Chablis Premier Cru Fourchaume has aromas of lemon pith, crushed oyster shells, and orange blossoms with bright acidity and flavors of canned white peach, freesia, Meyer lemon, and just a touch of brown baking spice in the finish. With almost five years since harvest, it is drinking just perfectly right now.

Image Credit: Louis Michel & Fils The Michel family has been making wines in Chablis since 1850, and Louis Michel & Fils currently makes wines from a large number of vineyards, including three Grand Crus, Grenouilles, Les Clos, and Vaudesir; eight premier crus, Montee de Tonnerre, Sechets, Butteaux, Forets, Vaulorent, Vaillons, Butteaux, and Montmain; as well as Chablis and Petit Chablis appellations. Louis Michel & Fils Montee de Tonnerre 2023 has complex aromas of crushed oyster shell, lemon zest, and citrus blossom with perfectly balanced acidity and flavors of peach, apple, and lemon lime zest.

William Fevre 2023 Chablis Vaillons Premier Cru

Domaine William Fevre joined the DBR Lafite portfolio in 2024 and continues to be one of the most highly rated producers in the region. The house’s 2023 Vaillons has aromas of white flowers, lemon zest, and crushed oyster shells that transition to flavors of peach, gooseberry, and lemon pith on the palate.

Domaine Christian Moreau Père et Fils 2023 Chablis Les Clos Grand Cru

Together, they own 30 acres of vines in Les Clos, Clos de Hospices, Valmur, Vaudesir, Blanchot, Cru Vaillon, Chablis, and Petit Chablis. Their 2023 Les Clos is straw yellow in color with aromas of lemon zest, crushed oyster shells, and orange blossom that lead to a generous mouthfeel and bracing minerality with delicious flavors of lemon curd, pineapple, pear, and white flowers.

Jean Marc Brocard 2023 Chablis Montmains Premier Cru

The family grows grapes on 593,000 acres and currently has 110 employees to cover all aspects of winemaking. Over 3 million bottles are produced each year, but one of our favorites is their Chablis Montmains. It has enticing aromas of pink grapefruit sections, sea air, orange blossom, and fennel frond that pave the way for flavors of lemon and white peach with balanced acidity.
