Michel Roux Jr. Will Open a New Restaurant at Crossbasket Castle

A Michelin-starred chef is getting ready to expand his footprint in Scotland.

Michel Roux Jr., who oversaw the Michelin two-star Le Gavroche, will open a new restaurant at Crossbasket Castle in Glasgow early next year, the Scottish Sun reported on Thursday. Trocadero’s Restaurant and Cocktail Bar will be his second outpost at the property, where he already has his namesake Michel Roux Jr. Restaurant. When it opens on March 16, Trocadero’s will feature a fine-dining menu accompanied by specialty cocktails and live entertainment.

The new restaurant is part of a larger renovation taking place at Crossbasket Castle, the Sun noted. Alison and Steve Timoney, who acquired the property in 2011, are investing more than $25 million into updates. The hotel will add 40 new bedrooms, including two grand suites, four junior suites, eight deluxe rooms, and 26 classic double/twin rooms. Along with the restaurant, there will also be two private cottages and a luxury spa.

“A tribute to the elegance and allure of a bygone era, we wanted to create a destination where guests could escape the ordinary and immerse themselves in a world of glamour and sophistication, whilst enjoying the full experience that only the finest live music and entertainment can provide,” Alison Timoney told the Sun. “We have an incredibly talented team, who have worked in some of the most respected five-star venues in the world and have been hand chosen to bring this unrivalled experience to us here in Scotland.”

The additions to Crossbasket Castle will allow the property to host an extra 35,000 guests a year and create 50 jobs in the area, the Sun wrote. It’s the second time that the Timoneys are updating the hotel, after it reopened in 2016 following a $12.6 million restoration. (The castle dates all the way back to the 17^th century.)

As for Roux, he’s following in the footsteps of his father and uncle, two icons in the fine-dining world. He took over their Le Gavroche in 1991, before closing the restaurant earlier this year. He’s also appeared on local versions of MasterChef, and he hosted Five Star Chef on Netflix.

The opening of Trocadero’s adds to Roux’s legacy in the United Kingdom, and gives diners one more spot for chowing down on his lauded fare.
