7 Perfect Drinks to Make This Fall

One of the most influential figures in cocktail history is David Embury, author of The Fine Art of Mixing Drinks. In his 1948 book he lays out the essential libations you need to know: the Martini, Daiquiri, Old Fashioned, Manhattan, Sidecar, and the Jack Rose. Now, that list made total sense until the last one. The Jack Rose, of all drinks, is in the pantheon of cocktails? We weren’t so sure ourselves. That was, until we realized that the greatness of the drink was totally dependent on making your own grenadine (a.k.a. pomegranate syrup). Using store-bought slop makes the Jack Rose not worth it all. But craft your own grenadine and combine it with apple brandy (either American apple jack or French Calvados) and you have a transcendent drink. In the video above, you’ll learn how to make grenadine yourself and then how to deploy it in this outstanding drink.

Add all ingredients to a cocktail tin and shake hard on ice for 8 to 10 seconds, then double-strain into a coupe. No garnish.

The Prime Inspector is a Boulevardier. I mean it’s not, even though it definitely is, save for the fact that they don’t share a single ingredient in common. But as a trio it still works like the venerated classic cocktail, and I’d argue, it works in the same way.

This is high praise. The Boulevardier is certainly the best of the Negroni variations (unless of course the Negroni is a variation of it) and is one of the great drinks of the world. And while it’s unclear whether Mitchell Taylor, during his time at the Nashville outpost of the legendary Manhattan speakeasy Attaboy, started with the Boulevardier when he was thinking about the cocktail that would become the Prime Inspector, that’s certainly where he ended up.

First, where the classic Boulevardier recruits the broad oaky shoulders of bourbon or rye for its base, Taylor substituted in apple brandy, which is similarly barrel aged but is distilled from apples instead of corn or rye, giving a core fruity quality beneath the familiar oak. For the signature bitterness, instead of the classic Campari, Taylor used the deeper Averna—where Campari’s orange bitterness is bright and juicy, Averna’s orange bitterness is a lower hum, like a flourless chocolate cake. Averna is also less bitter than Campari, and so perhaps guided by a compensatory instinct, Taylor reached for Punt e Mes instead of a standard sweet vermouth. Punt e Mes is both fruitier and more bitter than normal vermouth—the name “Punt e Mes” is Piedmontese slang for “point and a half,” as in, a point of vermouth and a half point of bitter—and joins forces with the Averna and a couple dashes of Peychaud’s to deliver the bitterness a Boulevardier fan would demand.

The ultimate result is an elegant, bitter, deeply autumnal little sipper, both darker and fruitier than the Boulevardier.

Stir all ingredients on ice for 10 seconds (if using small ice) to 20 seconds (if using big ice), strain over a large cube into a chilled rocks glass. Garnish with a cherry or orange peel.

The Michigander is not a one-size-fits-all experience. There are two pre-conditions to its enjoyment: One, you have to be OK with a bit of bitterness, and two (and more pressingly), it really helps to have a bone-deep love of the fall. But if you have these two things, you literally can’t do better than the Michigander, which tastes like how a freshly raked pile of leaves smells. It was created by Jason Schiffer at his bar just south of L.A., a midwestern transplant in Southern California reminiscing on orchards and scarves who created this mix of apple brandy, Cynar, lemon, and honey.

Add all ingredients to a cocktail shaker. Add ice and shake for eight to 10 seconds. Strain into a rocks glass over fresh ice and garnish with a grapefruit peel.

In hindsight, the American Trilogy is so obvious, it’s as if you asked for an fall-themed Old Fashioned from ChatGPT. When it was invented, though, in or around 2006 in New York,it was a revolution—at the time, no one was making split-based cocktails, so when Richard Boccato and Michael McIlroy combined apple brandy and rye whiskey into a single cocktail, it spread around the world. It’s not just novelty. Rye and apple brandy are fast friends—the apple brandy adding an autumnal echo to rye’s grainy persistence.

Add all ingredients to a rocks glass with the biggest piece (or pieces) of ice you have. Stir five to 10 seconds (if you have small ice) or 15 to 20 seconds (if you have big ice). Garnish with an orange peel. Enjoy.

The Fall Back, created by legendary late bartender Sasha Petraske, starts with rye whiskey, which is then split (like the cocktail’s closest relative, the Vieux Carré) with an equal pour of brandy, in this case Apple Brandy. Sweet vermouth provides a lush red-fruit component. The bittersweet Italian liqueur Amaro Nonino provides herbaceous orange notes, and it’s given both brightness and a surprising amount of charm from a couple dashes of Peychaud’s Bitters. What all of this yields is a Manhattan that is vividly autumnal. It’s round and full, bursting with spiced apple characteristics from the combination of the Peychaud’s and Apple Brandy. Amaro Nonino is relatively mild in terms of herbaceousness and bitterness and while both are present, it mostly brings orange complexity and a textured canvas for the cocktail’s other talents. It might be the perfect cocktail for fall, but it’s worth drinking at any time of the year.

Add all ingredients to a mixing glass with ice. Stir on ice for 20 to 30 seconds, and strain either on a big cube in a rocks glass or up in a coupe. Garnish with an orange peel.

The Apple Jack starts with apple brandy—a spirit distilled from apples and aged in oak barrels, the orchard equivalent of a vineyard’s Cognac, and made for hundreds of years in both northern France and the American east coast—which is tarted up with lemon juice, balanced with sugar, and then given a juicy blast of comforting spices by the addition of apple cider. “Much like his favorite sartorial standby, Sasha adored this drink on a crisp fall evening,” Georgette Moger-Petraske wrote in Regarding Cocktails about her late husband Sascha Petraske, who invented the drink at his legendary bar Milk & Honey.

He was allegedly inspired by a cocktail of same name in the 1930 Savoy Cocktail Book, but it’s hard to see how—the Apple Jack Cocktail in the Savoy is a half-and-half mix of French apple brandy and sweet vermouth with a dash of bitters, while Petraske’s version is a sour, a different thing entirely. It starts with the zing of lemon and brandy’s resonant fruit, then goes deep in the midpalate with oak and apples and finishes long with the lingering baking spices. It was conceived for American apple brandy but works with Calvados (the French kind). It also works with bourbon for that matter, and a mild scotch, and definitely with Irish whiskey. And really also vodka and aged rum or tequila. It just works.

Add all ingredients to a cocktail shaker with ice and shake good and hard for six to eight seconds. Strain up into a coupe or cocktail glass, and garnish with a lemon peel.

The Widow’s Kiss is an exceptionally charming drink. It features not one but two complex and beguiling French liqueurs, giving it a double-barreled blast of herbaceousness. Bénédictine is composed of 27 herbs and spices and bottled at 80 proof, which all seems like a lot, except when compared to Yellow Chartreuse, which recruits some 130 herbs and spices, and is currently bottled at 86 proof. It makes no logical sense that these two would work together but in the Widow’s Kiss they practically complete each other’s sentences, locking into one another like a vacuum seal, full and rich and infinitely complex. Add the apple brandy at their base and some Angostura bitters to spice the apples and you have one of the most flavorful and delicious drinks ever made.

So if the Widow’s Kiss is so good, why haven’t you heard of it? Because it’s sweet. The original recipe was two parts apple brandy to one part each of the liqueurs, giving this cocktail a quotient of sweetness that even its formidable alcohol content can’t quite tame. Tastes have grown drier in the 127 years since it was invented, and the general public, by and large, doesn’t drink dessert cocktails anymore. But people should reconsider. My feeling is that the sweetness and intensity of the Widow’s Kiss is absolute perfection as dessert, and an ideal capper to the night.

Stir ingredients on ice for 15 to 30 seconds (less time for smaller ice, more time for bigger). Strain off ice into a coupe and garnish with a cherry or lemon peel.
